What is Kohlrabi? I came across this alien-like veggie for the first time a few months ago in the organic section of my local supermarket. This unusual looking vegetable is not something I grew up with, which made me very interested in giving it a try. Below you will find how to prepare this delicious bulb along with links to some of my favorite recipes for kohlrabi.
Known as a “German turnip”, kohlrabi is a member of the Brassica family, which includes broccoli, cabbage, cauliflower and kale. Popular in German speaking countries and southern India; it can be white/green or purple. Easy to keep and prepare, it is a welcome addition to farmer’s markets and supermarkets across the US.
To prepare kohlrabi, just cut off the top stems. Slice off both ends and remove the outer skin with a knife or vegetable peeler. The leaves are edible and full of healthy vitamins and minerals. A quick sauté in olive oil and garlic is all they need. You can cut the bulb into strips, chunks or shred it, depending on how you decide to eat it. It can be stewed, fried, sautéed or baked.
Try kohlrabi raw first. It’s sweet and crunchy with the texture of a radish, but without the spicy kick. Dip it into sea salt and this may become your favorite way to eat it. Cooked, the texture becomes more like a broccoli stem.
My favorite way to prepare kohlrabi is to simply roast it with olive oil, garlic, salt and fresh pepper. Roasting brings out the sweet flavor of kohlrabi, and creates a caramelized crust that lets this unusual vegetable shine. Toss it in some grated Parmesan cheese and you’re in veggie heaven. Roasted kohlrabi with garlic and Parmesan recipe
Roasted Kohlrabi recipe from WSBlend
- 4 kohlrabi bulbs, peeled and cut into chunks, about 1 inch thick
- 1 tablespoon of good olive oil
- 1 clove garlic, minced
- 1/3 cup grated Parmesan cheese
- Salt and fresh pepper to taste
Preheat oven to 400 degrees Fahrenheit
Toss the kohlrabi in olive oil with garlic, salt and pepper. Arrange in a single layer on a baking sheet.
Bake in the oven about 15-20 minutes, turning a few times so they brown evenly. When they are cooked, remove from the oven and toss with Parmesan cheese. Place them in the oven again for a few minutes to brown the cheese then serve right away.
